Cooking With Coconut Oil

Health-conscious consumers are going  coo coo for coconut lately. They are drinking the water, eating the “meat” and cooking with the oil. But before you fill your pantry with coconut oil to cook with, be sure to choose the right form.

Just like olive, coconut oils come in refined, virgin and extra virgin forms. Experts agree that refined, processed coconut oil is not a good choice. Refined coconut oil can actually be harmful to health because it is adulterated with harmful contaminants created during processing.

"Choosing a high quality coconut oil is significant," explained Wellness Times editorial advisor Lise Alschuler, ND. "To avoid impurities associated with coconut oil, choose organic virgin coconut oil."

Alschuler, who is the coauthor of Five to Thrive: Your Cutting Edge Cancer Prevention Plan (Active Interest Media, 2011), explains that consumers may also not be aware that the more "virgin" the oil is, the less resilient to heat it becomes. "Extra virgin coconut oil, for example, should be used only at medium low heat, while virgin coconut oil can be used at medium high heats," she said.

Once you buy the right form of the oil, it’s easy to incorporate coconut oil and coconut water into your daily routine. Organic virgin coconut oil has many health benefits, says Alschuler, who thinks it makes sense to cook with coconut oil.
